Pickled Peaches


The Photographer arrived home a few weeks ago toting a 20 pound box of freshly picked organic peaches from one of our neighbor's orchards.  I spent the next two days in the kitchen - making Peach Salsa, Peach Preserves, Peach Pie Filling and Peach Ice Cream. 

At the Photographer's request, I canned 6 jars of Pickled Peaches.  I had never tasted these before and for some reason assumed I wouldn't like them.  We opened a jar last night and they are so good!  Somewhat reminiscent of Christmas in my opinion. These are so tasty and easy that I will definitely be making more of these next year.

Giggle! I know Lisa, that's why I thought I wouldn't like them. But they are really tasty. I was quite surprised!
